I think that historically there has been a value judgement associated with sex differences. In fact,I think one could argue that the differences between men and women have formed the basis for sexism and discrimination. It seems to me that that the things that women are purportedly "better" at than men, tended to have less culturally associated value, if not outright interpreted as weakness.
In order to avoid this judgement it seems to me that there has been a push to ignore those differences and adopt gender blindness. As a culture, I think we are a long way from embracing the differences which do exist as the wounds of sexism span generations.
However, even if that embrace should come to pass, then I believe there is, once again, the danger of using sex as a determinant rather than choice, natural aptitude and the strengths of individual.
And THAT is my very long-winded treatise as to potentially why there has been no discussion of gender differences in the way men and women interact with their therapists. :)
