I don't think I'd give up gluten even if I had celiac disease. I know I won't if I'm "intolerant". I did fairly well on my vacation by not eating anything that even resembled a vegetable (other than potatoes). I can go the rest of my life never eating a vegetable, if I must.
But to never have a bite of delicious yeasty bread with rich creamy butter?
Not going to happen, my friend.
