I speak only for myself, but after 10 months on an MAOI (60mg of Parnate). I haven't really had to restrict my diet at all. At first I avoided everything that was indicated on the diet restriction list. With my Pdoc's permission, I decided to try a small amount of cheese, just one thin slice, to see if there was a reaction and found there wasn't one. I gradually tried more in small incremental doses and eventually found that I could eat pizza and handle soy sauce just fine.

A real word of caution though, some people do indeed have severe reactions to these foods and it can be Extremely dangerous, but some people have no negative effect. Everybody's body processes medications and foods differently so there's no way to know how you'll react for certain. I would suggest talking to your doctor about it and remember to NEVER do anything if you haven't consulted them first.
