Gr. "thymis" means mind or mood. The Gr. prefix "eu-" is the combining form of "eus" = "good", used in neuter form "eu"."Euthymy" is a rather old English word - now obsolete - for cheerfulness, tranquillity.
See OED. As for why "they" took over this form, I for one don't know. "Euthymia" is not in the OED, doesn't even make it to the supplement.
