Could you go to school part-time this semester? Maybe one would course to satisfy your urge to learn and would allow you to further increase your sense of stability.
Most online schools seem to pressure folks into buying a package and doing the entire load. I don't know if the programs you're looking at do that.
Btw, that you are taking in the observations of those close to you speaks well of your progress, IMO.
Next semester, all going well, you could
adjust your coursework accordingly.
