I, er, squished them, when I added the salt, and then they very quickly got to where they wanted to be stretched, so I obliged. I didn't do it for very long or else I would have ended up with string cheese. Not a bad thing, but not what I was aspiring to.

My Carprese salad was yum for an early lunch. I believe I have enough ingredients left to make 28 more batches... maybe I will do mozzarella AND ricotta and then make a lasagna. (But not today, have already retired to the sofa with a magazine.)
