There are a number of texturizing additives, things that help the food still have the right consistency and what they call "mouth feel" after enduring the freezing, storage, and heating cycles. They're kind of like leftovers that aren't supposed to taste like leftovers, eh?
If you want to list the actual ingredients on a package, I could maybe give you some considerations (I'm a toxicologist), but the bigger issue is nutrition in general. Now, some people get on fine on a diet that would be inadequate for someone else. If you're one of the former, great. But I can guarantee there aren't many polyunsaturated fatty acids (essential fatty acids) in those frozen dinners. I'd be worried about developing functional nutrient deficiencies (as alexandra suggests).
