I started taking potato starch flour last fall, and, like you, it made me feel calmer and improved my sleep. Resistant starch improves insulin sensitivity, which is a good thing for most people, but not for me, because I have hypoglycemia. The potato starch flour would drive my blood glucose down, making me feel tired, so I stopped taking it after about six weeks.
A couple weeks ago I started taking the prebiotic GOS (galacto-oligosaccharides). I've taken FOS before, but it did nothing for me. GOS, like potato starch flour, makes me feel calmer and improves my sleep, and it doesn't drive down my blood glucose. I have to order it from England from a company called Bimuno.
