I would be more afraid of cheddar than of swiss. Usually, the more expensive aged cheeses are the most dangerous. Processed cheeses are less of a risk. Unfortunately, I can't quantify the risks of eating the various cheeses, so I am not recommending that you eat any type of cheese in partucular. The tyramine reaction is unpredictable. You can eat a certain type of cheese three days in a row without precipitating a hypertensive reaction, yet react badly to it on the fourth day.
