I believe you can eat more carbs if done the right way. There are plenty of specialty foods, and I eat them all, made from brown rice, amarynth, quinoa, millet, buckwheat, and others. Brown rice probably most common. Buy them ready-made or buy the gluten free flour from Red Mill brand to make your own breads, cakes, pizza crusts, brownies, etc. Rice pasta is easy to buy. Watch for sugar though. In recipes, use 1/4 or 1/2 sugar that it calls for. Or some honey. Or brown rice syrup. Stevia extract is incredibly sweet in tiny amounts, has a strange aftertaste, but is a good substitute.
Potatoes...eat the skin because it turns a fast carb into a slow carb. Eat all the carbs you want, but make sure to mix them with slow carbs and proteins to avoid the insulin peaks and valleys.
Still though, with known food sensitivities, you know there is something going on in the intestines that aint right. So ongoing treatment with high doses of digestive enzymes and probiotics will help you absorb all you eat and help the intestines heal.
For pharamceutical help, I guess you could consider low dose zyprexa, remeron, or a tricyclic like nortriptyline. All have common complaints of rapid weight gain. Even I, who can't gain weight to save the world, gained 10 pounds real fast on zyprexa.
My normal baseline weight was about 140lbs. I shot up to 150 on zyprexa. These days, with no drugs, and now with a gluten sensitivity, I am at 125lbs and cannot gain weight no matter what. I know one of the above drugs would do it though.
