One piece of advice: see a dietitian. If you've got problems with wheat and corn, you'll need to find other sources of starch in your diet. A good dietitian -- look for a Registered Dietitian, not just a "nutritionist" -- can help you with this.
You need carbohydrates in your diet. Without them, you start using proteins to meet your energy needs, which can result in excessive ketone bodies -- something you don't want. The trick is to structure your diet in such a way that your blood sugar does not fluctuate excessively -- and that's where a good, knowledgeable dietitian can help you.
