Maybe you can help this guy out, without antagonizing the other employees.

Or maybe you can inconspicuously try to be around when he might be vulnerable, as sometimes bullies won't do things if they can't totally get away with them.

You wouldn't have to be overt that you're not in sympathy with what they're doing, just be more there, present, and yet stay neutral, because as a witness, you can represent some sort of moral stance, without actually saying or doing anything.
