so, I have made two batches of madeleines so far. the first one I made with the recipe in "joy of cooking"
they turned out brilliantly. buttery, rich, not too sweet, lovely crumb
the second batch I made exactly the same, substituting heart healthy margarine for the butter. I know that T has high cholesterol, or something like that
DISASTER. they puffed up like soufflés, then all the oil from the margarine separated, and the souffle's collapsed. the end result was tiny little lemon omelettes soaked in vegetable oil.
My next attempt will use muffin batter, since it's lower in fat than classic madeleine batter. if it fails, I'm going back to the classic recipe, screw high cholesterol!
sigh. I'm sure there are other things I could be doing on my day off.
