Welcome to the therapy board. :)
I don't know where I got this idea from, but I get the idea that CBT is the predominant sort of therapy in the UK.
Finding a *good* therapist that you can work with is always a bit harder. I don't have Fallsfall's excellent post on the topic bookmarked on this computer or I'd give you a link.
I guess I'd say the phone interview followed by an in person interview would be best. And several of them, so that you don't feel compelled to go with any one of them. Recommendations always help. Can your GP or psychiatrist (if you have one) give you a list of a few therapists to start with?
I found my latest therapist through a list on the internet of a specialty I wanted to try. She was the only local therapist licensed for this specialty. I also found my EMDR therapist that way. Perhaps there is a society for CBT therapists in the UK that has a membership listing?
Is there a university near you? I've found some good mental health providers who were also professors at universities.
