Genes. And/or pigging out for many many years.

No. You can't increase your risk just by consuming simple carbohydrates.

That would best be where you focus your attention. You could benefit a great deal from some adaptive cognitive-behavioural therapy. You can learn how to short-circuit these obsessive thoughts. The elastic-band around the wrist is an example. The thoughts come, and you snap the band. It stings, and brings a moment of clarity.
I'm not expert on OCD. I'm not sure of the best ways to handle it. But I hope you put some of your energy into breaking that vicious circle.
