Anything up to 40 mg/day is believed to not affect copper, but that includes a safety factor as well. Deliberate inhibition of copper uptake by zinc (as a treatment for Wilson's disease) uses many times that dose.

The treatment for inhibited copper uptake is simply to stop the zinc, so any effect from long ago is no longer an issue (if that's what concerns you).
