FYI. Last evening, I re-read the thread from seven weeks ago to which I kept promising to reply. I wrote part of my reply, and I'll finish it this weekend and post it.

Now to the issue of this post.

I think you are making this way more difficult than it really is. Please forgive me if I say things that you already know about this issue.

If one eats a meal or snack that has a high glycemic load, the blood glucose level shoots up, and the body says:

"Whoa, this blood glucose level is way too high!! Quick like a bunny, dump in a bunch of insulin!"

But, the problem is that the body overshoots the amount of insulin that is needed and, as a result, the blood glucose level goes too low. This low glucose level is what you are measuring. Further, a low blood glucose level and high insulin can make some people irritable and others get really sleepy.

The solution to the problem is make sure you eat a balanced amount of protein, carb, and fat for every snack and every meal.

Google "glycemic index". The glycemic index is established using white bread as the food with the highest (worst) glycemic index of all other foods. As such, white bread is given a value of 1.0, and all other foods are a fraction of 1.

Do some reading online, and buy a paperbacked book with a list of the glycemic indexes for lots of foods.

Also, I recommend the book "Enter The Zone" by Dr. Barry Sears:

Dr. Sears was awarded the 1982 Nobel Prize in Physiology and Medicine. I think I have that right.
