Tyramine is a fermentation product of soya (and other) proteins. Microbes release the tyramine as a waste product of their metabolism. Tofu must be absolutely fresh to be safe. Unfortunately, it's hard to know how fresh a particular sample of tofu is, so the warning is generalized to cover the chance that the tofu might be a little old. Soy milk is sterilized, but I could imagine that it too could become "old", once opened, or if approaching the "best before" date.
