Suggest you try to get your hands on some recent articles on MAOI-food interactions. It turns out that mozzarella cheese is probably okay, e.g. The ceeses to be super-careful of include Stilton and bleu.

Tyramine reactions are dose-related; a lot of tyramine is worse than a little. Because you can't predict for sure what the effective dose (in raising BP) is for a particular person (it may even be different at different times for the same person), it's best to err on the side of caution. At the same time, many of the foods that have been listed as contraindicated are quite safe; due to hysteria over food-drug reactions, a lot of factually dubious claims have been made, passed on, and quoted as though they were facts rather than rumors. Today, some researchers are trying to undo the damage, but it's tough.

I don't take Nardil, but I take Parnate, another MAOI. I use Xanax occasionally. I think Nardil and Xanax sounds like a wonderful combination for anxiety, and I wish your husband the best.
