Soy lecithin.
From the package - "Lecithin is the name given to any of several phosphatides commonly found in animal and plant cells".
From nutritin book - "Lecithin is found naturally in soy beans, corn and egg yolks, and is very high in phosphorus. Lecithin also consists of ordinary fat, unsaturated fatty acids, and choline, and is found naturally in the myelin sheath, a fatty protective covering of the nerves".
