Addiction

Perhaps I am demonstrating a remarkable ignorance, but: Just what is 'addiction' and why is it dangerous? I understand that suddenly stopping some drugs can make one very ill, but that seems to mean simply that one should not do that, should taper off slowly. What is necessary and sufficient for 'being addicted to X'? What are the dangers? Why am I not (?) 'addicted' to, say, Haagen-Dazs--where at leat I do know ome of the dangers: cholesteral?
