my mother and my uncle and myself went to the annual lutefisk dinner at the sons of norway lodge two weeks ago. i have never been able to develop a taste for lutefisk although they did a good job on it. lots of butter, etc. my uncle and mother thought it was divine.

my grandfather came over from the little town of bjornestad and took that as his name here in the usa. the town is near skiifjord?

It's actually the sauce that tastes, the fish has been prepared with NaOH and dried and tastes nothing. The sauce is pretty good, it tastes like a white sauce flavoured with salt and pepper, really simple.

mattias has had one too many lutefisk dinners. I'll bet he likes rimmegrout too (don't know how to spell that). True the fish itself does not taste like much...it's the consistency that grosses me out...sort of chewy, slimy but still it disintegrates in your mouth anyway. hard to describe.

OK, here's one sort of question that pops into my head, when I read about a traditional food preparation technique like this one. Who had the brilliant idea to do it, the first time? Like, someone was sitting, staring at a cod, bored by cod, cod, and more cod, and they had the little light bulb go on, "I know! I'll soak this fish in lye, dry it out, and make it tasteless, with a weird texture! Then, I'll serve it over and over again, until it becomes a tradition."

Ya know?

I think a plausible explanation could be that the lye conserves the fish and the drying as well. It is maybe more easily stored as a sterile dry piece of 'tissue', at least in the old days. My father use to say: 'I would never eat it, it's rotten fish!'(in Swedish of course).
